The Food Processing Center at the University of Nebraska is a multi-disciplinary resource for the food industry, providing a combination of consulting, educational, technical, and business development services. Our mission is to advance the food industry by applying science, investing in people, and building businesses.
As a Food Safety Specialist, you will support the food industry in Nebraska by:
Communicating with manufacturers and partners
Developing and delivering preventive control courses for human food and animal food, following the standard curriculum of the Food Safety Preventive Control Alliance (FSPCA)
Coordinating reviews of Food Safety Plans
Actively engaging in Diagnostic Workshops with Gap Analysis assistance, quality control assessments and operational improvements
Offering audits of in-plant sanitation and safety practices regarding Food Safety Plans
Coordinating with other Food Processing Center staff, Manufacturing Extension Partnership (MEP) staff, and Nebraska Extension specialists and educators to develop programs to serve the food industry in the context of the Food Processing Center's mission and strategic plan
Promoting food safety services across National Institute of Standards and Technology (NIST) MEP system
Creating innovative and high impact learning programs and tools
Measuring the impact of the programs
Leading the continued improvement and implementation of the established Safe Quality Food (SQF) program in the Food Processing Center Dairy Plant
Accepting committee assignments, reporting responsibilities, and other special ad hoc assignments as requested at the administrative unit, college/division, institute, and or university level.
Must obtain FSPCA Qualified Individual for human food within 6 months of hire and SQF Practitioner status within 2 months of hire.

Minimum Required Qualifications:
Bachelor's degree in food science and technology, food technology for companion animals, animal science with food/meat science concentration, biological systems engineering with a food engineering emphasis, or related field plus two years of experience working in quality, food safety compliance, or production in a food or pet food company. Additional relevant education may be substituted for experience on a year-for-year basis.
Training and strong knowledge of FSMA regulations and HACCP.
Must have a valid driver's license and meet University driver eligibility requirements.
Preferred Qualifications:
Familiarity with third-party audit systems (GFSI programs).
FSPCA Qualified Individual for human food and pet food, Lead instructor for either.
SQF practitioner certification.
Experience with quality control procedures in food manufacturing, including at least one of the following: statistical process control, LEAN principles, and/or other continuous improvement procedures.
